Food Justice Team Vegetarian Recipe Collection

The Food Justice Team has hundreds of vegetarian recipes on our website, going back to recipes from an auction dinner we hosted in 2010.
We plan to work over the next year to better organize the recipes. In the meantime, we’ll share recipes in the Weekly News from time to time. Here is a very tasty one from a 2021: A presentation called “Terrified of Tofu” It’s very easy and impressive to serve to guests!

Tofu Chocolate Mousse
● 1 lb. Silken Tofu
● 1 tsp. Vanilla Extract
● 8 oz. Semi-sweet Chocolate Chips (this cook used 12-oz.)
● 1⁄4 cup + 1 tbsp. Confectioners Sugar

  1. Place tofu & vanilla extract into food processor and blend until creamy (but not liquid)
  2. Melt chocolate chips over double boiler or in microwave
  3. Place melted chocolate & confectioners sugar into food processor with creamed tofu, blending until ingredients are combined
  4. Let chill for at least four hours in refrigerator before serving
