Food Justice: “Seed to Plate, Soil to Sky”
As we approach Harvest time, it’s interesting to reflect on what the first meals were like. Indigenous people ate mostly plant based diets highlighting corn, beans, and squash, the “Three Sisters”. Eating animals was saved for special social occasions. It was only after contact with Colonists that Native Americans started raising animals and eating dairy products, and the government introduced processed foods on reservations.
